VINEYARD & TERROIRS

The grapes for “Célébration” hail from the town of Healdsburg in Sonoma County.  The cool growing area provides the perfect conditions for ripeness while retaining the acidity necessary to make first class sparkling wine. The vineyards are farmed sustainably with minimal impact to the land. The vines are narrowly spaced, using a vertical shoot positioning which help to promote even ripening and full sun exposure.

WINEMAKING

“Célébration” is made in the traditional méthode champenoise.  After the harvest, the grapes are crushed, de-stemmed, and gently pressed. The base wine is fermented in stainless steel, and each varietal is vinified separately. The wines are then blended after primary fermentation.  We allow the wine to rest on the lees in bottle for six months, riddling them regularly for six to eight months, where they undergo a secondary fermentation. During secondary, carbon dioxide is trapped in the bottle to create the bubbles.  When the wine is ready, we disgorge and top off with a base wine (no added sugar). After corking and labeling, we allow the bottles to age for an additional six months before release—approximately 18 months after the harvest.
