VINEYARDS & TERROIRS
Heringer Estates Vineyard. The vines were planted in 1987 in fine, sandy loam, and are trellised in the vertical shoot positioning system. Heringer Holland is certified sustainable.
After the harvest, the grapes are crushed, de-stemmed, and gently pressed. The Chardonnay is fermented in stainless steel. After primary fermentation, the wine rests on its lees for two months, after which it is racked into barrel (45-55% neutral French oak).We bottle the Chardonnay unfined with a light filtration a year after the harvest.
TASTING NOTES & PAIRING SUGGESTIONS
Inspired by the white wines of Burgundy, our Chardonnay exhibits a balance of ripe fruit flavors, crisp acidity, lingering minerality and toasty notes of oak. Old-World inspired but still 100% American, we like it with savory pan-fried pork chops, roast chicken, and grilled salmon steaks.
